Sauces for serving: Blue Cheese
An indulgent creamy sauce perfect drizzled over steak with some chunky chips

Ingredients
- 25g butter
- 1 tbsp plain flour
- 150ml milk
- 50g Cashel blue (or other blue cheese), roughly crumbled
Method
Put a pan on a medium heat, and add the butter, letting it melt slowly.
When the butter begins to bubble, stir in the flour until well-combined and let cook for a minute.
Using a whisk to stir the base, slowly pour in the milk, allowing for all the liquid to be combined before adding more to prevent lumps forming.
Bring the sauce to a simmer and let bubble for 2-3 minutes.
Add in the cheese and cook until it has melted and the sauce has thickened slightly. Add seasoning to taste and serve.
